Vegetarian Chili Recipe

  • Two tablespoon oil
  • Large onion, diced
  • Four cloves of garlic, finely minced

  • 2 cup of frozen corn
  • 10 ounce of beans
  • Whole tomatoes
  • Three celery stalks, diced
  • Two medium carrots, diced
  • Two bell peppers, diced

Method

  1. To start, heat oil in a large pot over medium-high heat. Add onion and sauté for about three to four minutes. Introduce garlic and sauté one minute more. After that, it’s time to add chili powder, cumin, oregano, and chili flakes and then stir for about thirty seconds.
  2. Step two begins with adding in the peppers, carrots, and celery and cook for about five minutes, or you can know they are ready when they start to soften. Now add tomatoes and their juice and bring to simmer. When you note the chili begins to simmer, reduce the heat to medium-low. You want your vegetarian chili to be at a low simmer with the lid off.
  3. For the next about twenty minutes, cook the chili and stirring occasionally. Introduce beans and corn and let the chili return to a simmer. You can continue to cook for about another five minutes or until the corn and beans have heated.
  4. Carefully add salt to taste. This one of the critical step as you need to salt your vegetarian chili recipe generously. Salt helps bring out the flavor and more so as create a feeling of depth that sometimes is in most vegetarian recipes.
