I still feel that the decision to become a vegan is one of the best decisions of my life. However, it put me in the dilemma of what I should eat that is not animal originated. And that dilemma took me to the journey to experiment and taste various vegan food recipes. As a beginner, it was quite hard to accept the taste of the meat and dairy replacements such as tofu, soymilk, almond milk, peanut butter.   • Heat a pan and add one tablespoon of vegetable oil in it.
  • Add two tablespoons of cornflour to the diced tofu to coat them well and then shallow fry them. Take them out when they become nice golden in color.
  • Now add and heat two tablespoons of oil in the pan and add grated garlic, ginger, and diced onions. Sauté them for one minute. You can also add vegetables of your choice to make the dish colorful.
  • Now add one tablespoon of soy sauce, vinegar, two tablespoons of tomato ketchup, one teaspoon of sugar or maple syrup, and half a cup of cornflour slurry.
  • Stir all the ingredients well and add the tofu to the pan when the gravy reaches the boiling point. Cook it for a minute or two. And the dish is ready to eat with steamed or fried rice.

  • Take a cup of oats and grind that into a fine powder
  • Now in a bowl, add the powdered oats, half a cup of grounded almonds and walnuts, two tablespoons of chia seeds, one tablespoon of cinnamon powder, half a cup of maple syrup, two mashed bananas.
  • Then mix all the ingredients by gradually adding almond or coconut milk to the bowl and make a thick yet pouring batter.
  • Now fry the pancakes using vegetable oil and serve with maple syrup.

No-Cook Veg Meal Bowl

Veganism introduced me to couscous that we can eat without even cooking. To make a couscous veg meal bowl for one person,

  • Take a bowl and add half a cup of hot water to half a cup of couscous and mix it thoroughly.
  • Now add frozen veggies like peas, carrots, beans, corns, etc. to the bowl.  Or you can even add boiled veggies too.
  • Then cut some tofu into small pieces and mix them with one teaspoon of soya sauce and one teaspoon of garlic oil.
  • Now add salt as per taste and mix everything and your no-cook veg meal is ready to eat.

Veganism is a choice, and this choice has led me to a new world of food that I am still discovering. That is surely a new experience that creates a cruelty-free world for the animal.
