If you have just started learning about healthy living or dieting, then you have likely come across vegan eggplant recipes. I’ve also heard from many people about how much healthier vegan diets can be because they are actually better for you. However, some people are still not comfortable vegans. Bring a pot of water to boil and add the zucchini, mushrooms, basil leaves and tomatoes. Cover the lid and cook for about 20 minutes until the vegetables are soft.
As for vegan eggplant recipes with baked pasta, a great tip for these kinds of recipes is to use a vegan baking sheet. A vegan baking sheet is made of aluminum foil. Using a baking sheet allows you to bake the eggplants less bitter. If you bake the eggplants less bitter, you will end up with a more flavorful dish.

Another one of my favorite vegan eggplant recipes is Cakes of Heaven. This dish is made by filling a baking sheet with uncooked pasta, zucchini, onions, mushrooms and pine nuts. Spread a layer of mozzarella cheese over the top and bake in the oven until the cheese is completely melted. When it is ready, sprinkle some of the uncooked pasta with some of the cheese and serve on top of that.
My favorite vegan recipes include other dishes that are also stuffed with hearty foods such as tofu. One of my favorite vegan eggplant recipes is called Roasted Pepper and Cream. This dish is made by roasting one tablespoon of dried roasted pepper and adding it to a medium sauce made with one cup of milk and three tablespoons of soy sauce. Mix in one tablespoon of vegan Worcestershire sauce, one teaspoon of dried garlic, and then blend all of those ingredients together until the sauce is a smooth paste. Then, add in one tablespoon of vegetable oil. Bake this dish for about twenty minutes until the peppers are soft.
An excellent vegan recipe for a curry is called Mango Curry. This curry recipe contains a mango, chickpea paste, cumin, garlic, Cayenne pepper, green chilies, tomatoes, and a tamarind sauce. Bring this tasty vegetarian dish to your dinner table and delight your taste buds. Use tofu in this recipe to create a more mild dish and use less vegetable oil than usual to cook the tofu. You can also substitute vegetable shortening for the oil if you do not like the taste of the oil.
